{Fall-ish Apple Rings}

With temperatures only in the upper 50's this week, FALL is on our minds!  

A trip to the local orchard last week has left my refrigerator brimming with apple goodness, and I have the perfect breakfast recipe to help usher fall through the front door and onto the kitchen table!



Apple Rings

1 Cup Bisquick Baking Mix
1 Egg
1/2 Cup Milk
1 Teaspoon Pumpkin Pie Spice
1/2 tsp Lemon juice (or zest)
2 Medium Apples, cored and sliced in 1/4" sections

Whisk all ingredients together (except the apples) until smooth.  

Grease and heat the griddle.

Using a skewer or your fingers, dip the apple slices into the batter, making sure both sides are well coated.   Cook on the hot griddle until golden brown, turning once.  


Serve hot with maple syrup, honey, or with a slather of peanut butter and sprinkle of brown sugar.


Note:  The apple rings stay a bit crunchy, which I prefer.  If you want them softer, I would recommend making the slices thinner, and perhaps cooking them at a lower temperature so the apple has a chance to cook more before the batter browns too much.  


Now all I need is a Pumpkin Spice Latte to go with my breakfast. . . .
